Steps:

  1. Salt the cabbage: Cut the napa cabbages into quarters and sprinkle salt between the leaves. Let them sit for 3 hours.
  2. Make the kimchi paste: Combine the gochugaru, garlic, ginger, sugar, and fish sauce in a bowl. Mix well.
  3. Rinse the cabbage: Wash the salted cabbage thoroughly to remove excess salt.
  4. Mix the paste: Add the julienned radish and green onions to the paste, then apply it to each cabbage leaf.
  5. Ferment: Pack the kimchi into a jar, press down firmly, and leave it at room temperature for a day. Transfer to the fridge, where it will continue to ferment.
